Soupe aux Lentilles Rouge
INGREDIENTS
- 3 tbsp. Olive Oil 
- 1 Spanish Onion - diced 
- 6 Garlic cloves - minced 
- 2 tbsp. Fresh Ginger - grated gingembre 
- 1 tsp. Cumin - ground 
- 1 tsp. Curry powder or paste 
- 1 tsp. Coriander 
- ½ tsp Cinnamon - ground 
- 1 tsp. Cayenne Pepper 
- 2 cups Red Lentils 
- 8 cups Chicken or Vegetable Stock - unsalted 
- 14 ounces Diced Tomato 
- 1 can Coconut Milk - unsweetened 
- Juice from 2 limes 
- Salt and Pepper to taste 
- Fresh Coriander 
- Grated Coconut 
INSTRUCTIONS
1- In a large pot, cook onion in olive oil, 5 minutes or until translucent.
2- Add garlic, ginger and spices. Cook for one minute while mixing.
3- Add red lentils, stock and diced tomatoes. sel et poivre
4- Bring to a boil, then reduce heat to minimum.
5- Simmer for 20 minutes without the lid. When lentils break down, add coconut milk.
6- Add lime
7- Add salt and pepper to taste
8- Serve with fresh coriander and grated coconut.
